Breakfast Pizza

Since moving to Texas, my cooking style has changed significantly! Keep in mind that I do get lots of cooking practice with living 80 miles from town and making supper every night. I would say I am a much better cook after living here for more than five years. And I have morphed my style with the Texas flavor influence. I would say that I now have a mix of recipes that are very Texas style and Texas-Midwest mix. But some things are 100% Midwest!

If you are from the Midwest, you are familiar with Casey’s General Store gas stations. And you may be familiar with their pizza. But have you tried their breakfast pizza? I LOVE their breakfast pizza! Whenever I make a trip to visit family, I always make a point to stop to get a piece!

This past April, we traveled to the Midwest for a reception with family and friends who weren’t able to travel to Texas for our wedding. I had already introduced Justin to the yummy goodness of Casey’s breakfast pizza, but then also had a chance to have his mom try it! We stopped at Casey’s in the snow as we were leaving Nebraska City to get breakfast!

That led Justin to do some online searching and he found a copycat recipe! Of course we had to give it a try! I have tweaked the recipe only slightly by switching from sausage to bacon. It is SOOOOO good!

So I want to share this awesome Midwest treat with you!

You will be able to get most of the prep work done while the oven is pre-heating. You start with a refrigerated pizza crust roll and Velveeta cheese. It calls for 4 oz. of cheese and that really is enough. This is NOT a time when more is better!

Be sure to slice the cheese very thinly. After you bake the crust with the cheese on it for 5 minutes, you will need to spread it around. I like to use a silicone spatula. It won’t look pretty, but that’s ok!

Once the crust with cheese is in the oven, you can scramble the eggs and cut up the bacon. I highly recommend pre-cooked bacon. It works perfectly for this! There is no need to take the time or make the mess of cooking bacon! Assemble the rest of the ingredients, bake and enjoy!

Copycat Casey’s Breakfast Pizza

Ingredients

  • 1 refrigerated pizza crust
  • 4 oz Velveeta cheese
  • 4 eggs
  • Salt & Pepper to taste
  • Cooking spray
  • 8 slices pre-cooked bacon chopped
  • 1 cup shredded mozzarella cheese

Instructions

  1. Preheat oven to 400 degree F.
  2. Lightly grease a sheet pan with nonstick cooking spray. Place the pizza dough onto the sheet pan and flatten out.
  3. In a small bowl, whisk together the eggs, salt and pepper until blended.
  4. Spray a small skillet with cooking spray, and heat over medium heat. Pour in the egg mixture. As the eggs begin to set, gently pull them across the pan with a spatula, forming large curds. Continue cooking while pulling and folding the eggs until thicken and no visible liquid egg remains. Remove the pan from heat and set aside.
  5. Chop pre-cooked, bacon into small pieces and set aside.
  6. Thinly slice the Velveeta cheese. Place slices around the top of the pizza dough. Place sheet pan with dough and cheese into the oven and bake for 5 minutes. Using a knife of silicone spatula, spread the Velveeta out so that it covers the dough, except for on the outer edges.
  7. Layer the scrambled eggs and chopped bacon over the Velveeta. Top with shredded mozzarella cheese. Bake for an additional 13 to 15 minutes or until the cheese has melted and the crust is lightly browned.
  8. Cut into slices and enjoy!

Recipe Notes

You could replace the bacon with cooked, crumbled breakfast sausage!
